St. Charles County Food Inspection Scores: UnKorked, Longhorn, Monical’s Pizza, Golden Corral

The St. Charles County Department of Public Health monitors more than 1,300 food service providers in St. Charles County. (The City of St. Peters conducts its own inspections.) Routine inspections are conducted by specialists with the department for proper food safety procedures and are scored by deducting points from a starting score of 100.

The following acronyms are used in violation information: PHF (Potentially Hazardous Food), TCS (Time/Temperature Control for Safety), FCS (Food-contact Surface), NFC (Non-food contact surface), RTE (Read to Eat).

Containers storing foods that are not readily and unmistakably recognized not labeled 2(pnt) – Observed containers holding flour, etc. were not labeled with the common name of the food; all containers must be labeled with the name of the food inside. Dirty NFCs 2(pnt) – Observed the shelves near the dishwasher, the shelves near the reach-in freezers, and the shelf above the chicken wings hot-holding unit had accumulated a build-up of food residue, grease, debris, dust, etc.; all of the shelves should be wiped down frequently to eliminate the build-up. Observed food residue on the can opener; during the inspection, the can opener was put into the dishwasher and the food residue was removed. Observed the inside of the ice machine had a white residue build-up on the walls and ‘barrier’; the ice machine should be drained, then washed, rinsed, and sanitized to remove the white residue

Dirty NFCs 2(pnt) – Observed the floor of many of the reach-in coolers were dirty with food residue and debris; the floors of coolers should be cleaned often to eliminate the food residue and/or debris. Observed the ice machine in the kitchen area, as well as the ice chute for the public to use, had accumulated a black and white residue; the ice machine in the kitchen was turned off during the inspection with plans of washing, rinsing, and sanitizing this evening; the ice chute should be cleaned as soon as possible also. Observed a build-up of grease, debris, etc. on the shelves near the dry storage area and the shelves in the walk-in cooler; the shelves should be cleaned as soon as possible and often to eliminate the build-up. Observed the hoods above the grill and fryers were dirty with grease; all of the hoods are to be cleaned this evening to remove the grease; a company also cleans the inner part of the hoods and is due to complete the cleaning again in May. Observed trash, food residue, etc. on the floors under the shelves in the walk-in cooler, as well as the floors under all of the coolers, grills, fryers, etc. in the front kitchen area; the equipment should be removed from the walls and the floors should be swept and mopped to remove the trash, debris, etc.; this should be a routine task that is completed often

Ready to eat PHFs not dated 5(pnt) – Observed containers of ready-to-eat foods were not dated with the day of preparation or 7 days later; foods that will be used within 24 hours after preparation or removal from their original packaging are not required to be dated; during the inspection, the owner discarded items that were not dated

  • Midwest Petroleum, 1060 Bryan Road – score 93

Improper methods of Time used for temperature control 5, 2(pnt) – Observed no stickers were on the food items that use time instead of temperature; any item that is using time, rather than temperature, should be marked with the time of when the food was removed from a cooler or 4/6 hours later, when the food must be discarded; during the inspection, all food that was not marked with the time was discarded and the new food items were marked with the proper time. Dirty warewashing sinks or machine 2(pnt) – Observed the 3-compartment sink was dirty with food debris in all compartments; the dishwasher was not working during the inspection, so the 3 compartment sink is required to be used when cleaning equipment, utensils, etc.; during the inspection, the 3 compartment sink was washed, rinsed, and sanitized and prepared to clean equipment, utensils, etc.

  • Longhorn Steakhouse, 2102 Highway K – score 93

Sink used for purposes other than hand washing 5(pnt) – Observed the hand washing sink located next to the dishwasher had food debris sitting in it; also observed the hand washing sink located in the bar had a fork and food residue in it; hand washing sinks should only be used for hand washing and no other purposes; during the inspection, the food and fork was removed from each hand washing sink. Dirty NFCs 2(pnt) – Observed the shelves above the prep areas throughout the kitchen had accumulated dust and food residue; the shelves, especially those that are holding clean equipment and utensils, should be washed, rinsed, and sanitized often to eliminate any accumulation. Observed trash and utensils in the mop sink; a mop sink should always be kept free of any trash or debris. Observed the hoods above the fryers, stoves, etc. had accumulated a large amount of grease; this is a repeat violation; the hoods should be removed weekly, or daily if necessary, and cleaned to remove the grease build-up

Light levels below requirement. Consider switching to LED bulbs and removing light shields as LED bulbs are made of shatter resistant material, to increase brightness in main kitchen.
