The St. Charles County Department of Public Health monitors more than 1,300 food service providers in St. Charles County. (The City of St. Peters conducts its own inspections.) Routine inspections are conducted by specialists with the department for proper food safety procedures and are scored by deducting points from a starting score of 100.

The following acronyms are used in violation information: PHF (Potentially Hazardous Food), TCS (Time/Temperature Control for Safety), FCS (Food-contact Surface), NFC (Non-food contact surface), RTE (Read to Eat).

  • Little Caesar’s Pizza, 614 North Main Street – score 91 (“Mice feces or roaches seen 5(pnt); Observed dead insects including spiders and cockroaches at the back of the establishment, as well as behind the pizza oven; steps need to be taken to eliminate the insects from the establishment; Observed the shelves above the 3-compartment sink, next to the 3-compartment sink, above the cold-holding unit, and in the front of the establishment all are sticky with food residue, debris, grease, and dust; the shelves that hold clean utensils and equipment should be washed, rinsed, and sanitized, and the shelves that hold non-food contact items should be wiped down; Also observed the fan guards in the walk-in cooler are dusty and need to be cleaned; Observed the hoods above the pizza oven are covered in grease and black residue; the ovens should be cleaned on a scheduled basis, by a professional company, to eliminate the build-up of grease and residue; Leaking plumbing or plumbing in disrepair 5, 2(pnt); Observed the hot water for the establishment currently not working correctly and leaking from the 3-compartment sink when hot water is turned on; establishment is turning off the hot water when washing dishes and hands is not necessary, and turning on the hot water when those processes need completion; inspector washed hands during inspection and was provided with hot water after about 30 seconds with the water running; owner is aware of the issue; plumbing needs to be repaired as soon as possible so hot water is always available”)
  • Qdoba Mexican Eats, 1290 Highway K – score 94 (“Observed many soiled towels sitting throughout the establishment; one soiled towel was placed on top of a bag of rice, while another was sitting behind the utensils and napkins for the public to use; soiled linens should immediately be placed in a receptacle that is for dirty linens only; Dirty NFCs 2(pnt); Observed the shelves in the back of the kitchen area are sticky with food residue and grease; the shelves should be washed, rinsed, and sanitized since they are holding containers that will come in contact with food; Observed the reach-in cooler in the front kitchen area that is located closest to the hand washing sink contains food residue on the bottom; cooler should be cleaned to reduce the build-up of food residue inside; Observed the container that holds the to-go containers for salsa and guacamole contains food debris; container should be cleaned often to be free of debris; Observed the floors in the walk-in cooler are dirty with trash and debris; the floors should be cleaned often to eliminate the trash and debris; Observed the floors under the food preparation tables in the back kitchen area, under the equipment in the front kitchen area, below the shelves in the dry storage area, and under the table holding the register are dirty with dirt, grease, debris, trash, etc.; the tables and equipment should be pulled away from the walls to clean the floors underneath; the floors under the shelves in the dry storage area should be swept often to eliminate the trash”)

    Why do some like Moe’s in Cottleville who had a 93 have no comments but scores of 94 and 95 do have comments

      Will, in previous reports I was trying to stick with a cutoff number for adding text details, first 85 and then 90. Then I started reading through all the reports, and I saw details that I felt the public should know about, even though scores were above 90. So, a score of 93 might be just because the previous score wasn’t posted, or a manager on duty hadn’t completed a food safety course. But when a score of 93 is because food is kept at an unsafe temperature, or toxic chemicals were stored near food, well, I think the public has a right to know. I wish I had time to add all the annotations. Since you asked about Moe’s, I’ll add it to the story. -Editor
