The St. Charles County Department of Public Health monitors more than 1,300 food service providers in St. Charles County. (The City of St. Peters conducts its own inspections.) Routine inspections are conducted by specialists with the department for proper food safety procedures and are scored by deducting points from a starting score of 100.

The following acronyms are used in violation information: PHF (Potentially Hazardous Food), TCS (Time/Temperature Control for Safety), FCS (Food-contact Surface), NFC (Non-food contact surface), RTE (Read to Eat).

Food stored on floor or exposed to moisture/contamination 2(pnt) – Foods to be protected from contamination from premises. Dirty NFCs 2(pnt) – Observed surfaces such as refrigerator cooling unit and equipment ceiling surfaces in need of cleaning. Damaged floor tiles, holes in walls, missing ceiling tiles 2(pnt) – Observed missing / Moved tiles in ceiling. Observed ceiling and walls and floor in need of cleaning to prevent build up. Discussed routine hand washing. Discussed sanitizing of surfaces.

Ready to eat PHFs not dated 5(pnt) – Observed that ribs stored in walk in have DOP of 9/29/17 Kept longer than 7 days.Prime rib dated but stored longer in cooler tan 7 days. Observed that ceiling in kitchen around vent fans have significant amount of dust. Insufficient lighting 2(pnt) – Observed that lights over food prep are not working

No hot water at Handwash sink (at least 100° F) 5(pnt) – Observed no hot water was available in both the women’s and men’s restroom; hot water is required to be available at every hand washing sink

Follow-Up Inspection fee was added to this inspection due to this being the second follow-up of the year. All ready-to-eat items or items that had been prepared were all dated with the day of expiration. Documents regarding “Time as Control” were completed and shown to inspector during the follow-up.

  • New China, 620 North Main Street – score 88

Sanitizer too strong 5(pnt) – Observed the chlorine-based sanitizer concentration, that was used in the establishment, read over 200 PPM; water was added to the sanitizer, but the concentration remained well over 200 PPM; the owner is planning to purchase bleach and a spray bottle to create their own chlorine-based sanitizer with bleach and water; Observed noodles were being rinsed in the 3-compartment sink; the 3-compartment sink should only be used for washing equipment, utensils, etc; the prep sink should be used for rinsing the noodles; Observed the mop was sitting in the mop holder; the mop must always be hung or flipped upside down when not in use

Observed that chicken and beef is defrosting in same container in walk in cooler; Employee unisex bathroom doesn’t have proper hygienic needs trashcans; Food permit not posted for public view

Dirty NFCs 2(pnt) – Observed a spill of food on the floor of a reach-in cooler; any spill should be cleaned up immediately; the manager was not aware of the spill until the inspection and had an employee clean the inside of the cooler. Also observed the floor of the shake reach-in freezer, as well as the area between the fryers and reach-in freezer accumulated a great amount of grease, debris, and food residue; the areas should be cleaned daily to remove the build-up of grease, debris, etc. Observed the back of the barrier inside of the ice machine contained a black like residue; the ice machine should be drained or ice removed, and then washed, rinsed, and sanitized often to eliminate the residue; Observed grease, debris, and a black-like residue on the floors under the fryers, under the shelves in the drive-thru area, under the shelves near the shake machine, under and behind the dishwasher, and under the shelves throughout the dry storage area; all floors should be swept and mopped daily to eliminate the grease, debris, and residue; Also observed the floor in the walk-in freezer was covered in ice; the ice should be removed from the floor and the floors kept clean to eliminate the possibility of ice forming on the floor again
