St. Charles County Food Inspection Scores: Ethyl’s, McGurk’s, Winery of the Little Hills

The St. Charles County Department of Public Health monitors more than 1,300 food service providers in St. Charles County. (The City of St. Peters conducts its own inspections.) Routine inspections are conducted by specialists with the department for proper food safety procedures and are scored by deducting points from a starting score of 100.

The following acronyms are used in violation information: PHF (Potentially Hazardous Food), TCS (Time/Temperature Control for Safety), FCS (Food-contact Surface), NFC (Non-food contact surface), RTE (Read to Eat).

The following scores were posted within the last week, January 17 – 23, 2018.

Lake Saint Louis

  • McDonald’s, 885 Robert Raymond Drive – follow up

    All previously cited violations observed to be in compliance. Parts for label machine ordered but wrong, machine doesn’t work

  • Walmart bakery, 6100 Ronald Reagan Drive – score 100
  • Donatelli’s Bistro, 8653 Highway N – score 98

Wentzville

  • SSM St. Joseph Hospital, 500 Medical Drive – score 100
  • Ruby Tuesday, 1218 West Pearce Boulevard – score 100

    Observed no hot water in mens bathroom. All handsinks should have hot water which is adequate for restaurant to function and meet hand washing needs. Alternative hand washing should be made available until hot water service is restored. Dirty FCSs 2(pnt) – Utensils to be stored to keep clean. Wash, rinse and sanitize as needed. Dishes washed, rinsed and sanitized to be handled in such a manner as to keep them clean.  Dirty NFCs 2(pnt) – Equipment surfaces such as vent blowers, milk dispenser, surfaces over foods or fcs or areas holding utensils to be maintained clean. Ceilings and floors in need of cleaning to prevent build up.

  • Dairy Queen, 817 North Main Street – score 100

    Ready to eat PHFs not dated 5(pnt) – Observed containers of ready-to-eat foods in the walk-in cooler were not labeled with a date and other containers in the walk-in cooler were labeled with a date, but had passed the 7 day shelf-life; the food that was not dated or past the 7 days was removed from the cooler and discarded; Improper storage of toxics 5(pnt) – Observed a package of road salt was sitting on the counter, which was above food-contact surfaces and next to food and food-contact surfaces; the salt was removed from counter during the inspection. Also observed hand sanitizer was placed at one of the prep sinks; hand sanitizer should only be placed at hand washing sinks.  **Hot water heater burst due to cold weather conditions; no points were deducted and maintenance workers were at the restaurant attempting to fix the heater during the inspection; no dishes are being washed until hot water heater is fixed, so dishwasher and sanitizer levels could not be tested; also, hand sanitizer was placed at each hand washing sink to be used after washing hands; inspector will return within 24 hours to confirm the heater has been fixed and is working properly.   • Taco Bell, 603 South Main – score 96

    Dirty NFCs 2(pnt) – Observed an accumulation of a sticky residue on the shelves located above the 3-compartment sink; since the shelves are holding clean equipment and utensils, they too should be clean and free of any residue; the equipment and utensils on the shelves should be removed and the shelves should be washed, rinsed, and sanitized; Observed the floors in the walk-in cooler, as well as the walk-in freezer were dirty with food residue and debris; the floors within the walk-ins should be swept often to eliminate the debris and residue build-up

  • Burger King, 609 South Main Street – score 96

    Dirty NFCs 2(pnt) – Observed the shelves located near the 3-compartment sink are sticky and covered with food residue; the items on the shelves should be removed, and the shelves should be washed, rinsed, and sanitized to eliminate the stickiness and residue; Observed the floors in the back area near the back door are dirty with trash and debris; also observed the floors under the fryers have accumulated a large amount of grease, food residue, and debris; the floors throughout the entire establishment should be swept and mopped often.     Improper storage of toxics 5(pnt) – Observed a bucket of cleaner was left in the walk-in cooler, placed on top of a bucket of pickles; all chemicals must be stored in a location separate from any food or food contact surfaces; during the inspection, the cleaner was removed from the walk-in cooler.   • Sonic Drive In, 312 South Main Street – score 93

    Improper storage of toxics 5(pnt) – Observed one spray bottle of dumpster cleaner was stored above buns and bread; chemicals must be stored below or separate from all food and food contact surfaces; during the inspection, the spray bottle was removed from its location above buns and bread and stored separately from the food; Dirty NFCs 2(pnt) – Observed the shelves near the 3-compartment sink were sticky with food residue and debris; the shelves are holding clean equipment and utensils and should be free of the sticky residue at all times. Discussed light in walk-in cooler, cooler near grills/fryers

  • Jack in the Box, 415 South Main Street – follow up

    Ready to eat PHFs not dated 5(pnt) – Observed ready-to-eat foods and foods removed from their original container, in the walk-in cooler, were not dated with the day of preparation or day of removal; inspector will return in 10 days to inspect the dates on ready-to-eat foods and foods removed from their original containers; Improper methods of Time used for temperature control 5, 2(pnt) – Observed the “Time as Control” document that was needed to be completed for the items that use time in this restaurant was not completed by the time of follow-up; also observed the stickers that were used to note the time for each food item were not up to date/time; during the inspection, new stickers were put on the food items that were up to date and using 4 hours as the time control; inspector will return in 10 days to inspect the time stickers and shall receive the “Time as Control” document via email by that date; Facility still has not paid the $35 fee for a follow-up inspection from the previous year. Due to the fee not paid, the facility still has not been issued their 2018 St. Charles County Food License.

DISCUSSED INTERNAL THERMOMETERS INSIDE COOLING UNITS AND MAKING VISIBLE, DESIGNATE HANDSINK IN BAR AREA WITH CLEARER SIGNAGE, ORGANIZING OF WALK IN FREEZER
