St. Charles County Food Inspection Scores: El Maguey, Imo’s, Potbelly Sandwich Shop

The St. Charles County Department of Public Health monitors more than 1,300 food service providers in St. Charles County. (The City of St. Peters conducts its own inspections.) Routine inspections are conducted by specialists with the department for proper food safety procedures and are scored by deducting points from a starting score of 100.

The following acronyms are used in violation information: PHF (Potentially Hazardous Food), TCS (Time/Temperature Control for Safety), FCS (Food-contact Surface), NFC (Non-food contact surface), RTE (Read to Eat).

Sink used for purposes other than hand washing 5(pnt) – Observed food in the hand washing sink that is in the front kitchen area; hand washing sinks should only be used for washing hands and no other purposes; a preparation sink or trash can should be used to discard food; Discussed display original copy of 2018 Food License, ServSafe certification, Jewelry 

  • Imo’s Pizza, 625 North Main Street – score 95

Improper storage of toxics 5(pnt) – Observed sanitizer packets were stored on top of the fountain soda dispenser located in the back of the kitchen area in the establishment; chemicals must be stored separately from or below any food or food contact surface; during the inspection, the packets were moved to a shelf designated only for chemicals; Observed one spray bottle, labeled with ‘Bleach”, but the chemical inside of the bottle was not bleach; the chemical was tested using the chlorine test strips and displayed a 0 PPM concentration; the liquid was also a yellow color; during the inspection, the liquid was removed from the bottle

Dirty NFCs 2(pnt) – Observed the shelves near the grill and stove contain food residue and debris; the shelves should be cleaned often to eliminate any debris; Observed a build-up of grease on the hoods above the stoves; a company is scheduled to clean the hoods this month; Observed food debris on the floor in the walk-in cooler; floor should be free of any debris or residue; Observed a spill on the floor under the dishwasher; any spill should be cleaned up immediately; Observed the wall behind the grill is no longer smooth or easily cleanable; stainless steel cover should be added to that area of the wall to make the wall smooth and easily cleanable. Observed food residue and debris on the floors under the grill and stoves; equipment should be removed from the walls and the floors should be swept and mopped often to remove the build-up of debris

Equipment, linens, single service not stored properly 2(pnt) – Observed equipment, single-service items, and food-contact items were stored on the floor in the dry storage closet; all items must be stored at least 6 inches above the floor; Dirty NFCs 2(pnt) – Observed the inner portion of the ice machine has a white residue on it; the ice should be removed from the machine and the inside of the machine should be washed, rinsed, and sanitized; this procedure should be done often to eliminate the white residue build-up

  • Doughboys Wood Fired Pizza, 6925 Michigan Avenue – score 100
  • Playoffs Sports Bar and Grill, 2922 Highway K – score 93

Unlabeled spray bottle 5(pnt) – Observed one spray bottle of sanitizer was not labeled; all spray bottles are required to be labeled with the chemical it contains; during the inspection, the spray bottle was labeled; Food stored on floor or exposed to moisture/contamination 2(pnt) – Observed the container of flour was stored on the floor, as well as a bucket of pickles in the walk-in cooler; all food items must be stored at least 6 inches above the floor; during the inspection, both items were placed onto a shelf that was at least 6 inches above the floor

  • Imo’s Pizza, 2756 Highway K – score 95

Improper storage of toxics 5(pnt) – Observed a plastic paint roller tray was sitting on top of a box of fountain soda; the tray was removed from the location during the inspection; paint is not to be in the establishment, other than when the paint is being applied; discussed with the manager of how they are only painting in the dining room; Observed the chlorine-based sanitizer level in the spray bottle was above 200 PPM; chlorine-based sanitizer concentration should be around 100 PPM; during the inspection, the spray bottle sanitizer was remade, and read a concentration of 100 PPM

  • El Maguey Mexican Restaurant, 2737 Highway K – score 93

Improper storage of toxics 5(pnt) – Observed two bottles of Windex were stored on a shelf above food contact surfaces; during the inspection, the chemicals were removed from the shelf and moved to a location separate from any food or food contact surfaces; Also observed multiple bottles of chemicals stored on a shelf above toilet paper and paper towels; the chemicals were moved to the lowest level on the shelf during the inspection; Observed both of the mops sitting on the floor while the heads of the mops were wet; mops must be hung or flipped upside to dry when not in use; inspector noted this as a discussed topic previous inspection; Discussed Staff drinks, Apply for remodel permit 

  • Papa John’s Pizza, 929 Highway K – score 85

Observed no employee currently working at the establishment was certified in ServSafe nor Basic Food Sanitation; at least one manager is required to be certified in the Managerial ServSafe, while all other employees should be certified in Basic Food Sanitation; Improper storage of toxics 5(pnt) – Observed a bottle of a chemical was stored on top of pizza boxes; chemicals can only be stored separate or below any food or food contact surface; during the inspection, the chemical was moved away from the pizza boxes and into a designated area for chemicals; Observed the most recent inspection report was not displayed in the establishment; as per code, it is required for the most recent inspection report to be displayed in the establishment for the public to view

  • Pho-Happy Wok, 2942 Highway K – score 95

Ready to eat PHFs not dated 5(pnt) – Observed multiple containers of food in the walk-in cooler were not labeled with the day of preparation or day the food was removed from its original container; all ready-to-eat foods or foods that have been removed from their original containers are required to be dated; during the inspection, food that was prepared today was dated and other foods were discarded

DISPENSER TO BE SERVICED AND WILL FOLLOW UP TO VERIFY CORRECTION. MANUAL MIXING AND TESTING OF CHEMICAL TO BE PERFORMED OR STERAMINE TABS USED UNTIL CORRECTED. FOLLOW UP FOR CHECK ON QUAT DISPENSER AT 3 COMPARTMENT SINK. DISPENSING AT HIGHER AMOUNT THAN ALLOWED. DISCUSSED VISIBILITY OF INTERNAL THERMOMETERS IN COOLING UNITS; DESIGNATING OF BAR HANDSINKS, USE AND RESTRICTIONS, AND STOCKING/MAINTENANCE OF THOSE SINKS. CEILING TILES TO BE PUT BACK IN PLACE…OVER HOT WATER HEATER (BY ICE MACHINES) AND OVER BEER WALK IN COOLER. SELF CLOSER ON EMPLOYEE RESTROOM DOOR

Employees not washing hands 5(pnt) – Observed employee pick up trash can and scrape grill debris into trash can and not wash hands or change gloves before picking up customer plate and serving food onto plate. Raw meats above RTE food 5(pnt) – Observed raw chicken in walk in refrigerator over tortillas and observed raw beef over already cooked chicken dish cooling on shelf below. Ready to eat PHFs not dated 5(pnt) – Potentially Hazardous foods in refrigerators are to be date marked and disposed of after no more than 7 days in refrigeration. Dirty NFCs 2(pnt) – Shelving and ceiling of ice machine in need of cleaning to prevent build up. Continue to work on a compliant place for mop water to be dumped. Celiling in need of cleaning and repair of water damaged areas. Discussed personal items such as phones and drinks are to be stored away from food. Person in charge with food safety certification is to be present whenever food is being prepared or served.

OBSERVED CAN OPENER WITH ACCUMULATION OF DEBRIS; Damaged floor tiles, holes in walls, missing ceiling tiles 2(pnt) – OBSERVED FLOOR TILES IN POOR CONDITION IN BAR AREA. OBSERVED CONCRETE FLOOR IN WALK IN COOLER IN NEED OF RESEALING. OBSERVED UNNECESSARY ITEMS STORED IN KITCHEN AND ON FLOOR IN KITCHEN. DISCUSSED OPTIONS FOR FLOOR/TILE REPAIR. DISCUSSED CORRECT TESTING AND STRENGTH OF SANITIZER IN DISHMACHINE AND QUAT SANITIZER TABLETS FOR SINKS.
