St. Charles County Food Inspection Scores: Chuck E Cheese, China Buffet, Walnut Grill

The St. Charles County Department of Public Health monitors more than 1,300 food service providers in St. Charles County. (The City of St. Peters conducts its own inspections.) Routine inspections are conducted by specialists with the department for proper food safety procedures and are scored by deducting points from a starting score of 100.

The following acronyms are used in violation information: PHF (Potentially Hazardous Food), TCS (Time/Temperature Control for Safety), FCS (Food-contact Surface), NFC (Non-food contact surface), RTE (Read to Eat).

The following scores were posted within the last week, January 10 – 16, 2018.

Lake Saint Louis

    “Dirty FCSs 2(pnt) – Containers and utensils to be maintained free of encrusted food. Equipment be maintained in good working condition. Observed accumulation of moisture in bottom of True reach in refrigerator at south side of service window.”

    “Ready to eat PHFs not dated 5(pnt) – Observed ready-to eat-foods and food that had been removed from its original container were not dated with the day of preparation (or day of removal from package) or 7 days following; also observed some foods that had a discard date of January 18th, which is 9 days from the day of preparation (which was today, January 10th); the food should only have a shelf-life of 7 days, so the discard date should be changed; Improper storage of toxics 5(pnt) – Observed two spray bottles containing chemicals that were stored above food contact surfaces or dry storage goods; chemicals must be stored separately or below any food or food contact surfaces; Dirty NFCs 2(pnt) – Observed multiple containers holding clean utensils that had accumulated food residue and debris; the containers should be free of debris and residue; Observed shavings present on the can opener; the can opener should be cleaned after use if any shavings or food remain; Observed the top and side of the fryers contain a great amount of grease and need to be cleaned as soon as possible to eliminate the grease build-up; Observed residue inside the ice machine in the front bar area; the machine should be drained, and washed, rinsed, and sanitized often to eliminate any residue; Observed the soda nozzle holder was draining poorly, causing water/soda to build-up in the holder; the holder should be drained immediately once any liquid remains in the holder; Observed the microwave was dirty with food residue; the microwave should be cleaned often to reduce the residue build-up; DiscussedL ServSafe near expiration; include kitchen manager in ServSafe certification; Display 2018 permit once received; Back overhead light; Walk-in cooler floors; Test strips”

    “Ready to eat PHFs not dated 5(pnt) – Observed ready-to-eat foods in the walk-in cooler and some of the reach-in coolers were not dated with the day of preparation or 7 days following the preparation date; Improper methods of Time used for temperature control 5, 2(pnt) – Observed no written records were available for items that use time instead of temperature; also observed the food items that were using time did not contain a sticker noting when the items began using the time or the 4 hours later; a written procedures document was emailed to the manager of the establishment following the inspection; the document should be completed by the follow-up inspection; Thermometers missing from hot or cold unit 2(pnt) – Observed a few of the reach-in coolers were missing a thermometer; all cold-holding units are required to have a thermometer to display the internal temperature; Observed the floors in the walk-in cooler were dirty with debris; the floors should be swept and clean often to eliminate the debris; Observed the floors under the shelves in the back storage area, under the fryers, and under the stoves had accumulated a great amount of food residue, debris, and grease; the equipment should be removed from the wall often to sweep and mop in those areas; Observed the wall behind the 3-compartment sink and the preparation area near the 3-compartment sink contain stains from food; the walls should be wiped down as soon as possible to remove the stains”

    “Dirty NFCs 2(pnt) – Observed the shelves located in the back of the establishment were sticky from food residue; the equipment should be removed from the shelves, and the shelves should be washed, rinsed, and sanitized; the equipment should also be washed, rinsed, and sanitized before placing back on the clean shelves; all shelves in the establishment should be cleaned often to eliminate the sticky-like residue; Observed the floors throughout the establishment, specifically in the walk-in cooler, under the 3-compartment sink and under the fryers had accumulated grease, debris, and residue; the floors should be swept and mopped often to eliminate the build-up of grease and food debris; Observed one floor tile in front of the 3-compartment sink that was cracked; the tile should be replaced as soon as possible; cracked floor tiles cause difficulty when cleaning the floors”
