St. Charles County Food Inspection Scores: Bob Evans, Longhorn Steak House, 88 China follow-up

The St. Charles County Department of Public Health monitors more than 1,300 food service providers in St. Charles County. (The City of St. Peters conducts its own inspections.) Routine inspections are conducted by specialists with the department for proper food safety procedures and are scored by deducting points from a starting score of 100.

The following acronyms are used in violation information: PHF (Potentially Hazardous Food), TCS (Time/Temperature Control for Safety), FCS (Food-contact Surface), NFC (Non-food contact surface), RTE (Read to Eat).

The following scores were posted during the period of August 7 – 13, 2019.

Wentzville

  • CVS Pharmacy, 1550 Wentzville Parkway – score 93

Dirty FCSs 5(pnt) – Dish machine sanitizer concentration not detectable at time of inspection. Manager states chemical is on order. 3 comp sink is in use until chemical sanitizer for dish machine arrives. Shake mixer and other contact surfaces of equipment should be cleaned as necessary.

Food stored on floor or exposed to moisture/contamination 2(pnt) – Observed moisture accumulation in walk in cooler and at HVAC ceiling vents in prep area over food items in storage and prep. Moisture and contamination from moisture to be controlled. No foods to be stored or transported where it can be contaminated by moisture.

  • 88 China, 1933 Wentzville Parkway – follow up

3 compartment sink no longer leaks and it appears toilet gasket has been replaced and do not observe toilet leaking at time of inspection.

Food out on counter is at refrigerated temperature(40F) but should not be left on counter in hot kitchen. Time in temp danger zone should be tracked for Potentially Hazardous Foods left on counter awaiting prep and foods should be refrigerated or used and served as kitchen is very warm.

Dirty walls, floors or ceilings because of construction or improper installation 2(pnt) – (1) Observed accumulation of dust on ceilings above the food preparation areas. This is a repeat violation. (2) Observed accumulation of litter, grease, and food debris underneath the grill and fryer area. This is a repeat violation. (3) Observed accumulation of boxes by the back door. This is a repeat violation.

DRYING MOPS  – Observed mops in bucket when not in use. Mops must be hung to dry when not in use.

Unnecessary items/clutter and litter 2(pnt) – Observed “Out of Order” and/or unused equipment in the kitchen. Repair or take out equipment to avoid unnecessary items in the kitchen that could create potential harborage.

Damaged floor tiles, holes in walls, missing ceiling tiles 2(pnt) – Observed missing floor tiles near the back door area on the way to the walk in cooler. This is a repeat violation. Floors must be smooth and easily cleanable. Observed accumulation of grease on floors underneath the fryer. Clean floors regularly to avoid build up.
